Spinach Quiche
1 10 - 12 oz. box or bag of frozen chopped spinach, thawed and well drained
6 eggs
1 ½ cups of skim milk
1 small package of shredded Parmesan cheese
6 – 8 oz. of shredded Swiss cheese
2 uncooked pie shells (not deep shell)
Mix all ingredients together and pour into 2 uncooked pies shells. Bake at 375 degrees for 30 min. Let cool before cutting.
