Sweet Potato Bacon Hash
8 slices bacon
2 sweet potatoes, peeled and diced
3 shallots, chopped
¾ tsp salt
¼ tsp pepper
2 cups spinach
1-2 Tb water
2 tsp lime juice
6 large eggs, beaten
1 avocado, diced
Sour cream to taste

leftover grease in the pan. Put chopped
shallots and diced sweet potatoes in the pan.
