As Promised! Oreo Cake

I did have the recipe after all.  Here's the recipe for the Oreo Cake I was telling you about.


Oreo Cake

1 box chocolate cake mix
4 squares of Baker’s chocolate
1 package of Oreo Cookies
½ stick of butter
1 cup of sugar
1 8 oz. tub of Cool Whip
1 8 oz. bar of cream cheese

Bake the cake according to the directions on the box.  Bake in 2  9” round pans.  Cool completely.  Mix sugar and cream cheese until smooth.  Fold in Cool Whip, but don’t use beaters.  Crush ¾ of the Oreos into pieces.  Gently fold in Oreos and place the mixture in the refrigerator until the cake is completely cool.
Place first layer of cake on a plate.  Gently spread Oreo mixture on top of this layer.  Place second layer on top of mixture with flat side facing up.  Microwave Baker’s chocolate squares in 30 second intervals until melted.  Cut up butter and mix into melted chocolate.  Let the mixture sit for 5 minutes to thicken.  Spread this across the top of the cake only.  You can add whole or crushed Oreos to the top of the cake to decorate.

Thanksgiving Dreams?

If you know me, you know that I have the craziest dreams a person can have.  Last night was no different.  I dreamed it was Thanksgiving Day and everyone was coming to my house to eat.  In my dream, I had not bought the first bit of food or started any kind of cooking!  Needless to say, this was a little stressful.  All the grocery stores were closed and people were starting to arrive.  I woke up and started thinking about Thanksgiving favorites.  We all seem to have our specialties.  My mother always wants me to make a corn dish she loves and my kids like my squash casserole.  I think my son would sit down and eat the whole dish by himself if he could.  My sister-in-law is half Japanese and makes the BEST fried rice and she makes it for every family gathering.  If we didn't have fried rice, we would all be so disappointed.  My other sister-in-law makes the best sweet potato souffle.  My sister and niece make the green bean casserole and another niece makes an Oreo Cake.  I don't have the recipe for the Oreo Cake right now, but as soon as I get it, I'll post it.  It's very rich and very good.  So, here are some recipes you might want to use at Thanksgiving this year.  As I get pictures, I'll add them in.



Squash Casserole

2 cups cooked squash, drained well
2 cups cracker crumbs
1 egg
1 medium onion, chopped
1 can cream of mushroom soup
½ stick butter
1 cup shredded cheddar cheese

Mix all together and bake at 375 degrees for 30 – 35 minutes until brown.

 I decided to sprinkle a little more cheese on top and cook it for 5 more minutes to melt the cheese.
This is only half of the recipe.  I put the other half in a pan and put it in the freezer for dinner another night.
Fried Rice

4 cups cooked rice, cold
4 – 6 scrambled eggs, chopped
2 Tb. oil
1 cup of cooked, chopped meat (ham, bacon, shrimp, or chicken)
1 bunch of chopped green onions
salt and pepper to taste
soy sauce to taste

Scramble eggs and set aside.  Heat 2 of oil.  Add meat and heat.  Add rice, and soy sauce until you get the desire color. Add onions and chopped up eggs.  Add salt and pepper to taste.


Sweet Potato Soufflé

3 cups cooked sweet potatoes
1 cup sugar
2 eggs
1 tsp. vanilla
½ cup milk
½ cup melted butter
Mix above ingredients well.

Topping:
1 cup brown sugar
1 cup chopped pecans
½ cup flour
1/3 cup melted butter.
Mix topping ingredients and sprinkle evenly over potato mixture.  Bake at 350 degrees for 30 – 40 min.

Creamy Corn

1 chub (frozen tube) of creamed white corn
1 bag of white kernel corn
½ cup water
1 stick of butter
salt & pepper to taste

Combine all ingredients.  Cover and cook on low temperature until done.  Stir frequently to keep the corn from sticking to the bottom.
Green Bean Casserole

2 cans of cut green beans, drained
1 can of cream of mushroom soup
¾ cup of milk
1/8 tsp. of pepper
1 small can of french fried onion rings

Mix all of the ingredients except for ½ of the onion rings.  Bake at 350 degrees for 25 minutes.  Top with remaining onion rings and bake for 5 more minutes.

Speaking of Fried Chicken

I was talking to a friend today when she mentioned that she loved fried foods, but she knew she shouldn't eat it.  Imagine how surprised she was when I told her she could fry chicken or pork chops without frying them in oil.  She asked me if the directions were on my blog.  I told her that it wasn't, but would be tonight since she was interested.  I thought if she was interested, all of you might be too.  These directions are good for chicken or pork chops.  The only difference is the cooking time.

Oven Fried Chicken (or Pork Chops)

1 package of bone in chicken legs or thighs OR 4 to 6 pork chops
1 egg, beaten
1 1/2 cups of milk
About 2 cups of plain flour
salt and pepper to taste

Preheat oven to 400 degrees.  In a ziploc bag, mix flour, salt, and pepper.  Line a baking pan with foil and spray with nonstick spray.  In a bowl, mix the egg and milk.  Dip the chicken or pork chops in the milk mixture.  Put the meat in the flour mixture and coat.  Dip in milk mixture again and coat in flour.  Redip the meat one last time in the milk and lay on the baking sheet. Bake the chicken for 30 minutes, turn over, and cook for 25 to 30 more minutes.  For pork chops, bake 20 minutes on each side.  A crispy crust will bake onto the meat for a fried chicken or pork chop taste.
